Vegan Nettle Pancakes

Looking for some fun ideas on how to use freshly foraged nettles in cooking? Easy! Essentially you can use it in the same way as spinach or kale. Adding herbs to your diet is a natural, easy and effective way to add more nutrients to your daily life (and inexpensive!).

This easy and healthy pancake recipe suits almost any diet, and you can modify it to your liking.

Ingredients (10-15 small pancakes)

  • Oat milk or plant-based milk of your choice (400ml)
  • Chickpea flour (200g)
  • Fresh blanched nettle leaves (1 large cup)
  • METTÄ Nettle Salt (1/3 tsp)
  • Extra virgin olive oil or coconut oil (1 tbsp)


First blanch the nettle leaves. Place them in boiling water for 30 seconds, then pour the water away (or save the water and enjoy as herbal tea!).

Mix the dry ingredients together and then add in the milk and oil. Mix very well. Let the dough sit for 15 min and then fry on a hot pan (we recommend using a pancake pan). Use enough oil to make the pancakes nice and crispy, but don’t let them burn.

Serve with your favourite toppings, like fresh berries, honey, coconut yoghurt, jam or nut butter. Why not also try these pancakes with a salty topping, such as with our Mushroom Sauce or our Nettle Pesto.
