with Spruce Tip Dressing

Have you ever thought of using Spruce Tip Powder in your cooking? This delicious and nutritious salmon salad has a Nordic twist. It’s got all the raw ingredients of a spectacular fresh salad, but add a Spruce Sprout dressing and you’ve immediately given it a Nordic kick that will liven up your day!


Ingredients (for four)


  • 6 (1.2 kg) large red-skinned potatoes
  • 100ml olive oil
  • 2tsp sea salt flakes
  • 1 red onion
  • 200ml apple cider vinegar
  • 150g cold smoked salmon
  • 50g baby spinach
  • 1 handful of medium size capers

For the dressing:

  • 50ml olive oil
  • 25ml white wine vinegar
  • 1-2 tsp KERKKÄ Spruce Sprout Powder
  • Pinch of salt
  • 1 tsp of honey
  • Pinch of black pepper


Method


Wash the potatoes and dice them. Heat the olive oil in a large pan and fry the potatoes until golden brown in a few portions. Transfer to kitchen paper to drain and season with salt.

Peel and cut the red onion into thin boats. Transfer to a bowl and pour over the vinegar. Allow to soften until served.

Chop the cold-smoked salmon into serving pieces.

Rinse and dry the spinach, drain the capers. Drain the red onion as well.

Mix the sauce ingredients together. Assemble the salad in a bowl in layers. Serve with spruce dressing.
